Royal Potatoes
4 cups sliced boiled potatoes
2 cups grated cheese (cheddar or mozzarella)
1/4 cup melted butter
salt to taste
3 eggs
3 cups milk
Peel and slice potatoes while still warm. Butter a 2 quart casserole and arrange a layer of potatoes, sprinkle with cheese and melted butter, and repeat until all are used up. Beat eggs with milk, add salt, and pour over the potatoes. Bake, covered, 1 hour at 350 degrees. Add another 10 minutes, uncovered, if potatoes have not browned slightly or if liquid still remains.
